Finally the weather is getting better. Some weeks ago we had a preview of how a proper spring should look like, but it disappeared as quick as it appeared, leaving us embittered and full of desire. Like promising a dog a piece of meat without actually giving it. After all, today made me happy again. I really notice that the weather has a huge impact on my mood and on whether or not I collapse during the day because of a lack of energy and motivation. Yes, the sun is almost everything I need, besides a green and light summer salad.
I wanted to share my dish of today with you, not because it is special, innovative, or whatever, but because it looks beautifully green. I love green, it really makes me feel like summer. Because it is based on only green vegetables, it’s a really simple and light dish, but you can always use it as an entrée or lunch. Sometimes simple things are even better…! But I promise to come up with more proper main-course-like recipes next time. For now, some green-leafy vegetables are always welcome for your body.
This is what you need:
2 handfuls of spinach
1 avocado, in small parts
½ courgette, in strips of 1cm wide
3 artichoke hearts on oil, cut into quarters, plus 3 tbsp of the oil
1 hand of black olives
1 1/2 tbsp coconut oil
1-2 tbsp sunflower seeds
1 tbsp lemon juice
salt & pepper
1 tbsp hemp seeds (optional)
Heat the grill and sprinkle the courgette strips with 1 tbsp coconut oil and salt. Grill until they look gold-brown for 3-5 minutes. Heat a small frying pan on medium heat and ad the remaining coconut oil. Roast the sunflower seeds until they start to colour and take them out of the pan immediately.
Take two plates and arrange the spinach leaves. Add the avocado, artichoke hearts, courgettes and olives. Sprinkle some oil from the artichokes and lemon juice over the plates and garnish with sunflower seeds and hemp seeds. Season with salt and pepper and serve immediately.
