Banana & Coconut Pancakes

After a whole day of walking through the beautiful city centre of Maastricht, Marije and I had deserved a nice and sweet dessert. It was terribly warm today, and we had absolutely no energy left for cooking something with vegetables, nor for eating it, so we decided on baking these sweet little banana pancakes. They are super simple to bake, and with only a little bit of maple syrup they’re absolutely delicious.

This is what you need for 10 pancakes:

  • 2 very ripe banana’s
  • 4 eggs
  • 1/2 cup of shredded coconut
  • 1/2 tsp cinnamon
  • 2 tsp coconut oil for frying
  • fresh summer fruits to serve
  • 2 tbsp maple syrup to serve

Mash the banana’s and add the eggs, coconut and cinnamon, whisk to blend. Heat the coconut oil in a frying pan and add 2 or 3 tbsp of the batter for each pancake. Carefully turn the pancakes after 2 or 3 minutes and bake them golden brown. Serve with the maple syrup and summer fruit.
