Sesame Chickpea Cookies with Cottage Cheese

These simple and quick cookies are almost as filling and energy-providing as the Lembas bread of the elves in Lord of the Ring – yes, during the last few days we’ve been watching the whole trilogy and the Hobbit, including this morning, when we looked out of the window and saw the uninviting grey sky. On such days all my energy slips away and the only thing I want is to stay in bed longer, until I’m getting bored and I’m willing to do something. Actually, these days are perfect for baking these cookies, because then you’re doing something, it’s healthy, and it gives you the energy to maybe even do something more that day. They’re perfect as a snack but also as a side dish. I made them as a side dish for asparagus, which was really good, and as you can see my mom enjoyed it!

This is what you need:

  • 400 g cooked chickpeas
  • 1 big egg
  • 100 g sesame seeds
  • 2 cloves garlic, minced
  • bunch of chive, chopped
  • 1 tbsp coconut oil
  • salt & pepper
  • 150 g cottage cheese
  • 1 spring onion chopped

Preheat the oven at 200 degrees. Mash the chickpeas and mix the egg through. Add the sesame seeds (save some for on top), garlic, chive, and season with salt & pepper. Stir well until everything is mixed. Take 1 spoonful of batter for each cookie and place them on a baking plate, make them flat and cover with a bit of coconut oil and sesame seeds. Place them in the over for 15 to 20 minutes, until they look golden brown.

You can serve them warm or cooled, but they definitely need a fresh sauce. This is a simple one: just stir the onions, salt and pepper through the cottage cheese and serve.
